Kalua pork (or kālua puaʻa) is a traditional Hawaiian dish featuring tender, shredded pork with a distinct smoky flavor, often served as a centerpiece at luaus. The term "kālua" literally means "to cook in an underground oven" (called an imu), where a whole pig is roasted with sea salt and ti or banana leaves for many hours.
